Memorial Day Recipes: Individual Fruit Pizzas

MEMORIAL DAY RECIPES

INDIVIDUAL FRUIT PIZZAS

INGREDIENTS:

(24 servings)

Fruit of your choice (I used raspberries, blueberries, and strawberries)

8 oz of Cream Cheese (softened) (I used Light cream cheese)

7oz Marshmallow Cream

1 package of pre-cut sugar cookies

DIRECTIONS:

1. Mix softened cream cheese and marshmallow cream together and put in fridge till ready to use.

2. Bake cookies for 12 minutes or as directed on package

(I like to keep them soft for a chewy fruit pizza)

3. Let cookies cool for about 10 minutes

4. Top the cookies with the cream cheese mixture

5. Top with fruit of your choice.

6. Refrigerate until ready to serve!

I used raspberries and blackberries on some of the cookies making a star shape. On other individual pizza cookies, I used strawberries and blackberries. I cut the raspberries in half when I was using it for the star so they would lay nicely.

These are PERFECT for Memorial Day or for the 4th of July!! Enjoy!!

Red White & Blue Stuffed Strawberries

Here is another great recipe idea for the Fourth of July! It’s easy and such a great snack idea!

You will need:

20-25 fresh strawberries

20-25 fresh blueberries

80z. cream cheese

4 T. confectioners sugar

1 t. vanilla

1. Wash and dry strawberries and blueberries. Set blueberries aside. Using a small paring knife, cut the bottom off of each berry so that they stand up on a plate or tray. Using a melon baller, scoop out the top and stem of the strawberry.

2. In a mixer beat together cream cheese, sugar and vanilla until light and fluffy. Place this mixture in a ziploc bag and snip off a tiny corner of one bag to make an opening like a pastry bag. Alternatively, use a pastry bag if you have one available.

3. Gently squeeze the cream cheese mixture into each berry and top it with a fresh blueberry. Serve.

I know that yogurt is one of the things I can buy quite often at a really great price (using my coupons!) so I was happy to find another great way to use it (besides smoothies!). Your kids can eat them like candy, yet they are getting a healthy treat!!
